Chorizo Pasta Recipe
Life is a combination of magic and pasta!
This creamy chorizo pasta is the perfect dish for a quick midweek dinner. Be sure to pick up your smoked and matured chorizo from La Boucherie for an extra delicious dish.
What you will need:
• 350 g dried pasta of choice
• 250 g chorizo, skinned and roughly chopped
• 100 g bacon, chopped
• 1 medium onion, chopped
• 3 cloves garlic, chopped
• 50 g tomato paste
• 400 g tomatoes, chopped (or used canned tomatoes for a shortcut!)
• 1 tsp smoked paprika
• 1 tsp dried basil
• Salt and pepper, to taste
• 180 ml cream
• Handful baby spinach, roughly chopped
• Grated parmesan to serve
Method:
1. Cook pasta in a large saucepan of boiling, salted water following packet directions until tender. Drain.
2. Add the chorizo and bacon to a non-stick frying pan and cook, occasionally stirring over medium heat until crispy.
3. Add onion and garlic. Cook till the onion is soft. Add tomato paste, paprika, basil, salt and pepper. Sit to combine.
4. Add tomatoes and cook the sauce for 10 minutes. Add cream and spinach. Stir until the spinach has wilted.
5. Toss pasta with sauce.
6. Serve topped with freshly grated parmesan cheese.
