At the recent Cape Wine Exhibition, I was fortunate to be able to meet quite a few winemakers and taste their wines. One of them was Tim Hillock who started experimenting with fermentation in his teens, brewing beer! He then moved on to winemaking when his family bought a farm on the Kasteelberg and after a harvest in Rioja, he completed his own harvest in 2021 - we now have his range on our shelves and here are his Tasting Notes...
The grapes, grown by my neighbour, come from two vineyards aged 39 and 33 years old. The vineyards are on the foot of the Kasteelberg mountain and soils are therefore predominately schist. Aspect is South-East (a cooler slope) which allows optimal phenolic ripeness without unpleasantly high alcohol levels.
Winemaking: Hand harvested at dawn into small crates and driven to the cellar by tractor. The grapes spent a few hours in the cold room after which they were whole-bunch pressed to a settling tank. The next morning the juice was transferred to barrel where natural fermentation occured. The wine spent 11 months in barrel on the lees.
Maturation: 11 months in a 1300L Stockinger foudre (4th fill) and one 400L barrel (9th fill).
2035 bottles produced.
70% comes from a cooler site on the Paardeberg (granite soils) and the rest from around the Kasteelberg mountain (iron and schist soils). The vineyards are in their early 20’s.
Winemaking: Hand harvested at dawn into small crates and put in the cold room for a few hours. 100% whole-bunches got foot-stomped to release some juice and allowed to ferment naturally in a concrete tank.
Maturation: 10 months in a 2550L Stockinger foudre and three 300L oak barrels.
4346 bottles produced.
All but the Tinta Barocca come from schist soils around the Kasteelberg and Porseleinberg mountains (82% of the blend). The Tinta Barocca is a ±60 year old block on the Paardeberg and is predominately granite soils.
Winemaking: All components were harvested and vinified separately. All fermented naturally and the blend’s total whole-bunch component is 50%.
Maturation: 50% of the blend aged in old 300L barrels and the other 50% aged in unlined concrete for 10 months
3400 bottles produced.
